One Pan Annie’s Sneaky Broccoli Trick

BroccoliBroccoli is considered to be a superfood – it’s packed with vitamins C and K, fiber, and folate. It also contains phytonutrients (such as sulforaphane), which have been shown to have anti-cancer properties.
Do you cook broccoli often? Me either. But, I do add it to my salads and I eat salad every day. Do you see it in my salad mix? It’s pretty hard to because I start choping it at the flowerlet end so it’s tiny pieces look like spices. ┬áMy basic mix of Romaine lettuce, shredded carrots, brocolli, and chopped green onions is featured in the photo below.
Ready for lunch? Grab a handful or two of the basic mix, add some good stuff, and you’re in business. Todays good stuff in a boiled egg, small avocado, a handful of dried cranberries and some chopped walnuts.

By adding broccoli, I’ve added nutrients even though it hardly shows. Be like One Pan Annie, and add superfoods to your salad.
