One Pan Ann ie, doesn’t like mornings but she says it helps to know she gets to have this breakfast that can be made in about the time it takes to make her coffee.
Healthy, easy and cheap are important to One Pan Annie and this breakfast fits the bill. Divide the cost of two eggs, two tortilla shells and one tangerine into what you paid for them and you’ll find this breakfast is cheap. The amount for the salsa? Too little to calculate.
Why tortilla shells? One Pan Annie is gluten sensitive and corn tortillas are handy, tidy, and gluten free. Why a tangerine? They are not only just the rights size but they are delicious and easy to peel.
Here’s how she does it:
Pour olive oil into the small bowl, and then pour it back in the bottle. There will be enough left in the bowl to swipe around the entire surface to ensure your your eggs won’t stick.
Break two eggs into the bowl and beat to a froth with a fork.
Cover and cook for one minute. (This cover was made to open jars – and I might say it works like a charm. However, it is also great to keep the eggs from exploding,)
Heat two tortilla shells (anywhere from 15 to 30 seconds depending on the size of the shells).
Loosen the eggs from the bowl and cut in half. Place each half on a tortilla shell and top with salsa.
